The wine is bone dry, acidic and tannic, with deep, impressive blackberry, black currant, green tea, charred meat and black pepper flavors. Our 2012 is 100% Syrah from the CCOF Organic Massa Ranch in Yountville (Napa Valley), sadly our last vintage from this spectacular vineyard.* We adore this vineyard, and the Vineyard manager, Patrick Ridder, is a great farmer, a joy to work with and a great supporter of the Revolution. This is a rich and bold wine, distinctively Syrah with its signature blueberry, bacon fat and pepper notes.
We harvested the grapes on October 21, 2012, at 26.1° Brix, pH 3.83 and 6.2 g/L titratable acidity. We fermented the wine in several small bins, filling each halfway with whole cluster fruit before destemming the remaining fruit on top. Using whole clusters adds texture, enhances mouth feel and brings out the savory character of the wine. It also allows us to do pigeage, which is French for bouncing around in the fermentor to stomp the grapes. The wine matured in neutral French oak barrels. We bottled 150 cases in January, 2014.
